MICHELIN Guide’s Point Of View

The chef, passionate about Italy, went there to learn hospitality that heeds what the customer wants and is flexible. His installing of counter seats, too, was to be able to listen to his customers and innovate accordingly. His main focus is on the cuisine of Emilia-Romagna, a region where he stayed for a long time. The chicken cockscomb, liver and heart pasta is a representative dish.
