MICHELIN Guide’s Point Of View

This community-rooted restaurant was founded in the early Showa period (late 1920s-30s) and is now run by the third-generation chef who honours the Edomae technique passed down from the founder. He adds an extra touch such as pickling, marinating or searing the fish to bring out flavour. He uses rice vinegar and akazu for the best marriage of rice and topping. The omakase starts with seasonal snacks like shirako and hamo and transitions to nigiri.
