MICHELIN Guide’s Point Of View

Here is Japanese cuisine with a global perspective based on the owner-chef’s experience overseas. Calling this place a ‘chargrill kappo’ (sumibi kappo), he uses bincho charcoal for grilling to give the food fragrance. He puts much effort into sourcing ingredients domestically, but also incorporates caviar, Western vegetables, spices and herbs to broaden the scope of his cuisine. While the dishes remain Japanese, he also uses Western techniques like vacuum cooking.
