MICHELIN Guide’s Point Of View

The owner-chef’s vegetables dressed with sesame is a standard offering that lets customers experience the fragrance of freshly roasted and ground sesame seeds. Rather than relying on high-grade ingredients, he adds a creative touch. He also uses a lot of kudzu, following Kansai tradition. Salting the white-fleshed fish made into tsukuri is an idea inspired by the ‘Wakasa guji’ a preservation method where Wakasa red tilefish is cut open and salted.
