MICHELIN Guide’s Point Of View

The owner-chef takes advantage of choice ingredients and draws out the flavour with creative touches. The savouriness of the kombu for the soup is extracted using cold water. Creativity is also apparent in the uni and rice speciality. Adding raw uni when steaming the rice allows the residual heat to bring out its natural flavour. Elaborate preparations are evident throughout the orthodox presentation.
