MICHELIN Guide’s Point Of View

The key ingredient is wagyu, the pride of Japan. Starting with the flow of kaiseki, beef dishes are mixed in. Tomatoes are the secret ingredient in the oxtail spring rolls. The chargrilled beef tongue is seasoned with soy sauce rather than salt. The inspirations from Japanese cuisine don’t end there. The owner-chef uses several different dashi from katsuo, shrimp, meat and other ingredients. He has established an original menu based on his cooking experience.
