MICHELIN Guide’s Point Of View

This restaurant buys in local native varieties of buckwheat directly from farmers in each area and mills it into buckwheat flour. Enjoy the different soba noodle tastes depending on production area and ratio of buckwheat to wheat flour (nihachi or juwari). Seasoned with katsuo-bushi, the mildly sweet sauce brings out the soba flavour. There are also lots of shuko items, including soba miso, shrimp kakiage and horse sashimi. For dinner, be sure to reserve.
