MICHELIN Guide’s Point Of View

Negima nabe is a dish folk ate in the Edo period, said to have started from an idea to make use of fatty cuts of tuna. The proprietress opened the restaurant to introduce people to Edo ryori and, in keeping with her training, uses plenty of sake and katsuo-bushi to make the dashi. At the end comes rice cooked in an earthenware pot. Try it as-is at first, then chazuke-style with the dashi left over in the nabe. Her kimono-clad hospitality evokes a sense of times past.
