Hiroyasu Kawate uses ingredients from producers he has a relationship with. Investing these ingredients with his sensibilities, he produces one-of-a-kind dishes. He brings out each dish to the table himself and explains it enthusiastically. Talking about past experiences involving the dishes is part of the recipe, and he weaves a story into the dishes as they’re created in the theatre-like open kitchen. The speciality is beef from cows that have calved.
