MICHELIN Guide’s Point Of View

The chef pursues his own world of cooking based on personal experience and unconstrained ideas. He offers French cuisine using domestic ingredients. He prepares both seasonal ingredients and seasonings himself, creating modern dishes. The set menus are put together based on themes that have personal meaning to him. The main dish called ‘Wakachiau’ means ‘to share’ and features grilled meat that you divide up with others to experience the true joy of food.

The chef's commitment
Food sustainability is a goal we are working towards, with the focus on food loss. Our signature dish, ‘Sustainability, Beef’, uses beef from cows that have had at least one calf, and seeks to fuse sustainability and gastronomy. We create new value with dishes using ingredients that would otherwise be thrown away.
