MICHELIN Guide’s Point Of View

Founded in 1891, this restaurant is the origin of pressed mackerel sushi. It began with the konoshiro gizzard shad caught in Osaka Bay, which were vinegared and salted by wrapping them in cloth. Pressed mackerel sushi is called battera, from the Portuguese bateira for a small boat, because of the shape of the wooden mould. The gizzard shad catch decreased over time and mackerel came to be used instead. Enjoy a tradition passed down through four generations.
