MICHELIN Guide’s Point Of View

Daisuke Miyamoto’s approach is to work out his own unique take on Japanese cuisine while remaining true to its basics. He has a knack for reading his customers’ preferences and modulating his menu to suit them. He showcases the appeal of his native Kumamoto using, for example, beef raised there and the region’s sliced deep-fried tofu, nankan-agé. The rice dish in a clay pot uses organic rice from the proprietress’s hometown. Conversation with the amiable couple is always lively.
