MICHELIN Guide’s Point Of View

With its simple décor lit by candles, this restaurant is a little world unto itself. Owner-chef Hitoshi Ishihara says “Cuisine is a journey without end”, and is a stickler for the rules of chakaiseki. Rice, soup and mukozuke are placed before the guest on a lacquered tray and a cup of sake is poured. Both the rice and meat are sourced in Okuizumo out of his love for his hometown. Tea is prepared with the lights turned low; this dialogue between tea and Zen is the Mizai way.
