MICHELIN Guide’s Point Of View

The owner-chef is from Nagasaki, so weaves the flavours of his home prefecture into the flow of Kyoto kaiseki cuisine that never goes as far as extravagance. Seasonal seafood, such as tilefish and squid, come from the Goto Islands. The standard dishes are home-style, such as simmered cubed pork, and Goto udon that go down smoothly. The famous dashimaki tamago showcases the meticulous approach the owner-chef had instilled into him.
