MICHELIN Guide’s Point Of View

Owner-chef Kazutomo Matayoshi scours Japan, from Hokkaido to his native Okinawa, seeking ingredients with the right flavour and builds a relationship of trust with each producer. His cooking is distinguished by techniques that bring out inherent flavours. Originality is everywhere: lily bulbs made into a dumpling with no filler; oil-baked vegetables cooked with an evenness and thoroughness usually seen only with deep-frying; and tsukuri garnished with rock tripe.
