Dutch produce tends to take pride of place in the dishes, with short supply chains being a priority. The young chef showcases his sophisticated and nuanced take on modern French cuisine, which puts the emphasis on vegetables. Think duck leg served with a jus enhanced with five spices and the earthy sweetness of pumpkin. Surprisingly distinctive!
