The cooking is equally lavish, featuring a well-stocked raw bar, wagyu steaks and plenty of truffle and foie gras in between. Start your evening at the elegant bar with a perfectly chilled shrimp cocktail before digging into Salt Spring mussels with Normandy cider and crème fraiche. Beef flatiron set in a delicious sauce au poivre is a classic done right. And to finish, don’t miss the Gâteau à la banane, a sweet cake accompanied by salted caramel ice cream and caramelized bananas.
