MICHELIN Guide’s Point Of View

Three tasting menus (including one which is slighter longer than the others and includes both meat and fish), all of which change in line with the seasons and the à la carte options on offer. Eugenio is back with a flourish, offering a 100% Italian menu which focuses on local ingredients, with the aim of showcasing some of Italy’s traditional favourites while at the same time supporting small producers. His cuisine continues, nonetheless, to be influenced by other traditions, with some of his typical dishes reinterpreted with an international flavour. As an example, his “Una cima alla genovese ma non troppo” dish is a traditional Ligurian favourite reinterpreted as a Japanese roll yet made exclusively from Italian ingredients.
