At the helm of this popular eatery (bookings essential), chef Gaëtan Le Mauff rolls out his consummate command of first-class ingredients in a finely crafted menu. Everything is appetising from the snout in vinaigrette, olive oil, pistachio and caper sauce or veal with roast Jerusalem artichoke and a blanquette sauce to the sublime medley of oranges.
