MICHELIN Guide’s Point Of View

The owner-chef takes great care regarding the freshness of the chicken and getting the grilling just right. He orders whole chickens and dresses them himself. He cuts the pieces large so customers can fully enjoy the taste and grills them over a strong bincho charcoal flame. He keeps breast and thigh meat close to the flame and skin and liver further from it. The chicken cutlet sandwich at the end comes from the owner-chef’s experience with yoshoku.
