MICHELIN Guide’s Point Of View

Katsuji Ginya wants his tempura to be light in texture so as to bring out the natural flavours of the ingredients. For this reason, he uses clean-tasting cold pressed sesame oil. The light batter and the short deep-frying time at a high temperature condense the flavours. He puts much effort into selecting the ingredients, most of which are Edomae seafood such as sillago and anago. He sources vegetables directly from the growers and uses them to express the seasons.
