MICHELIN Guide’s Point Of View

Born and raised in Mie Prefecture, owner-chef Yoshiaki Tagawa wants his menu to tell stories. For example, the awabi and spiny lobster he sources from a friend in Toba tells of the ways of the ama, the women who free dive for shellfish. Also, harking back, his cuisine showcases the appeal of charcoal grilling. Formerly an engineer, Tagawa longed for a job that involved engaging with people, so switched careers, making his curriculum vitae a story in itself.
