Chef Interview: Cal Byerley, Winner of a MICHELIN Green Star and One MICHELIN Star

We spent some time with Cal Byerley and the team at Pine in East Wallhouses, Northumberland, winners of a MICHELIN Green Star as well as One MICHELIN Star in the Great Britain & Ireland Guide 2022

The launch of The MICHELIN Guide Great Britain & Ireland 2022 on Wednesday 16th February saw 9 new MICHELIN Green Stars awarded. The Green Star distinction highlights restaurants at the forefront of the industry when it comes to their sustainable practices. These restaurants offer dining experiences that combine culinary excellence with outstanding eco-friendly commitments, and are a source of inspiration both for keen foodies and the hospitality industry as a whole.

Pine, in East Wallhouses, was newly added to the Guide with not one but two distinctions, receiving both a MICHELIN Green Star and One MICHELIN Star.

The restaurant sits beside Hadrian's Wall, in the beautiful Northumberland countryside. The room has a rustic feel and oversized windows offer stunning views out across the fields, which provide the perfect backdrop to showcase the best Northumbrian ingredients.

Cal knows the local area intimately and, as well as plucking fresh ingredients from their kitchen garden, leads his team on foraging missions and seeks out small independent producers, farmers and growers. Using this produce, he creates small, finely crafted dishes which are full of colour and really pack a punch. Flavours reflect the area and all parts of the ingredients are skilfully used, with some preserved for later use.

English wines are a feature and they also make their own juices, tonics and teas.
