Chef Yuichiro Watanabe styles his approach ‘Watanabe-ism’ – a fusion of local food culture with French cuisine. For example, the kaminari-okoshi sweet rice puff snack produced in Komagata Asakusa and sobagaki are made French style. The meal flows like a story, from Edo-era elegance to authentic French traditions. The scenery, which includes pleasure boats on the Sumida River and the Tokyo SkyTree, is reminiscent of the Seine River and the Eiffel Tower.
