The name is an amalgam of the French words ‘lyrique’ and ‘laboratoire’. Leveraging his poetic creativity, the chef showcases the fruits of his research in his prix fixe offerings. The first half of the proceedings is steeped in playfulness, beginning with a balloon-shaped cocktail. In the second half, we get back to essentials, with fish and meat dishes dressed in sauces. Foodstuffs from Kyushu reflect the chef’s roots in Oita Prefecture. Be sure to try Oita’s famed kabosu citrus and its wines.
