MICHELIN Guide’s Point Of View

The owner-chef never ceases in his study of ingredients and combined with this spirit of inquiry is his desire to support producers and the locality. He pairs ingredients based on techniques cultivated in France to create dishes based on the idea that happy faces mean good flavours. This includes ayu fried with rice flour, hamo with buckwheat paste, and gazpacho recreated with summer vegetables. We look forward to his next ‘édition’.
