The Tuscan chef, with over 10 years of experience, took over in 2018. His menu showcases a farm-to-table concept, accentuating the natural flavours of organic produce, most of which is sourced locally. The tasting menu changes four times a year to reflect seasonality. The house-made long-fermented bread is a must, while signatures like ravioli alla carbonara and piccione Toscano are well matched by over 400 labels of mostly Italian wines.
