Alain Llorca, who boasts high-profile stints at the mythical luxury Negresco hotel and the Moulin de Mougins, amongst other fine food affairs, is an emblematic character of French Riviera cuisine. In his farmhouse in La Colle-sur-Loup, whose terraces commands a drop-dead view of Saint Paul de Vence, he gives free rein to his Mediterranean sensitivity and origins. The result is often an ode to seafood, steeped in subtle, delicate notes: slab of seabass in its jus with olive oil and citrus fruit zests, ‘Niçoise’ style monkfish with chards and truffles, but Tarn pigeon, foie gras and juicy tender beef also make guest star appearances in Alain’s intuitive approach to cooking.
