MICHELIN Guide’s Point Of View

In the Abbaye de Fontevraud estate, chef Thibaut Ruggeri (Bocuse d'Or 2013) enchants with creative cuisine placing the emphasis on the produce of the local terroir (Racan chicken, Anjou pigeon), as well as herbs and vegetables from the abbey garden. The Loire Valley enjoys pride of place on the wine list.

The chef's commitment
At the heart of the Fontevraud – Sustainable City project, the restaurant does its utmost to meet the challenges of sustainable development. The products we work with all come from the local land or the vegetable garden and beehives of the Royal Abbey. Our menu changes every moon, every 29 and a half days, in order to respect the rhythm of the produce as much as possible.
