MICHELIN Guide’s Point Of View

Paintings of the beautiful towers of San Gimignano and the bustling markets of Bologna adorn the walls at Via del Emme. Owner-chef Maeda looks back fondly on his sojourn in Italy. To learn the craft of making stuffed pastas such as ravioli and cannelloni, he travelled to Bologna. Because Bologna is an inland city, he also studied in Italy’s Marche region, on the Adriatic coast, becoming an expert on the foodstuffs of both mountain and sea.
