A unique sweet experience, a talented pastry chef

In this 1930s Basque hotel nestled in a pine forest and redesigned by designer Philippe Starck, Le Skiff Club restaurant is a veritable haven with its cosy little dining area decorated in the style of a yacht club. Stéphane Carrade is a talented and skilled captain, cooking up delightful "progressive terroir" cuisine, in a superb celebration of the Aquitaine region of southwest France. This is a chef who combines generosity and finesse in dishes such as roasted lobster with grilled avocado and Cumeo pepper, or Pyrenean lamb noisettes with date juice, accompanied by fine slices of truffles and ceps. Finally, Alexandre Blay's desserts keep all the promises this restaurant makes: his raspberry with a creamy basil sablé biscuit, sorbet vinegar marmalade and beetroot foam is poetic, light and precise.

"Faithful to our guidelines, which advocates "progressive terroir", as much as possible we work with the small producers of our region – local fish, vegetables, herbs, whole animals, while favouring the finest produce. Quality, tasty and as natural as possible. The chef drives in a 100% electric car and fetches certain supplies himself, such as vegetables grown in Biscarrosse. We plan to create a pig farm in order to recycle our green waste."
