MICHELIN Guide’s Point Of View
In this restaurant overlooking the pine forest, the chef and his niece cultivate classicism. Firmly rooted in his region, the chef likes to mention the "network of small-scale producers" – of foie gras, poultry, Chalosse meat, fish from the Adour River and Capbreton River – local produce that goes into what he calls "cuisine de cœur", that comes from the heart. His favourite season is autumn for its mushrooms and game. Superb.
