Two Stars: Excellent cooking

In a charming square showcasing an elm and a 17th-century church overlooking table seating in two of three dining rooms, Chef Davide Oldani is a mature figure in Italian cuisine. His precise and recognisable style encapsulates his two decades of rigorous independent work, incorporating all past celebrated experiences—from the unforgettable beginnings under the greats Marchesi and Ducasse, to name but a few—combining creative ideas rooted in Italian tastes, superior technique, precise and artful presentations, offering convincingly delightful flavours. Year on year, the elements are so finely polished, as seen in the farinaceous and leavened selections, for instance, assigned to a dedicated laboratory. Of the various tasting menus, Multiplicity and Lightness (10 courses) are those crafted with upheld aims by the chef, representing the most complete D'O experience, while Exactness offers historical dishes from the venue.
