“What I try to do is learn about foods and cultures all over Japan and convey their appeal through my cooking”, explains owner-chef Yoshihisa Suzuki. The menu changes each month, themed each time on the cuisine of a different region. One month he might serve Nichinan caviar from Miyazaki Prefecture, or showcase the sushi culture of Tokyo and Osaka. There is always something intriguing about Suzuki’s richly imaginative kaiseki.
