MICHELIN Guide’s Point Of View

Holder of a Meilleur Ouvrier de France medal, Emmanuel Renaut began his career at Les Ambassadeurs (Hôtel de Crillon) during a golden era when Constant, Camdeborde, Frechon and Rouquette were working together in the kitchen. He then joined L'Auberge de l'Éridan, assisting Marc Veyrat for seven years. Although he is very attached to ingredients from Savoie (his char and whitefish come from Lake Geneva), he does not restrict himself in any way: his greatest pleasure is going against the grain of the regional cooking that is sometimes expected – a case in point being his knife-cut langoustines marinated in citron and caviar, with zesty grapefruit and gentian roots. High-altitude cuisine from a chef at the top of his game.
