The seasons take pride of place in this 19C château, which houses the international hotel management school, formerly under the aegis of Paul Bocuse. Chef Florian Pansin and his team of students (studying cookery, pastry-making, baking, waitering etc) put together a tasty menu made with excellent ingredients. Add to that flawless technique and the occasional creative twist. Quite simply, it's a treat.
