Traditional fish recipes are given a fresh but down-to-earth twist with a sure hand. Richard van Oostenbrugge and Thomas Groot are once again making their mark here with no-nonsense dishes that you can feast on every day of the week – including at lunchtime!
For example, a generous portion of perfectly cooked mussels are served, dotted with vadouvan mayonnaise and calamansi jelly, which add freshness and nuance without spoiling the seafood's distinctive flavour. As a nod to the traditional recipe, a creamy vadouvan soup and green celery provide the finishing touch to this delicious reinterpretation. A beautiful piece of turbot roasted on the bone is topped with morels incorporating a mousse created from the fish's barbel, fine slices of lardo di colonnata and a rich beurre blanc.
