Somewhat hidden down a narrow street, Origens is a worthwhile choice given its location in the heart of Évora’s historic centre, where you can savour contemporary Alentejo cuisine prepared with sophisticated modern techniques. The menu is updated several times a year to ensure that the ingredients used are as fresh and seasonal as possible. One dish has been a mainstay since the restaurant first opened: “brás à farinheira”, made with smoked sausage. There’s also a surprise wine pairing option.
