Renovating a church sanctuary to house a wine bar and restaurant certainly doesn't sound like a Bad Idea to us. It's the premise behind this East Nashville spot, where Alex Burch leads a robust wine program with over 100 selections housed in a custom wine cellar and This kitchen sheds a light on Laotian cooking, fusing Southeast Asian flavors with French techniques in an array of shareable dishes. His dishes come together in really unexpected ways, as in the on-point, scallop mousse-filled crêpe, cut into three rectangles all resting in a nam prik blanquette.
