Bulls grazing, pink flamingos haloed by sunlight, canals, rice fields and the Rhône delta: welcome to Camargue and more specifically to la Chassagnette, a former sheepfold refurbished in the shape of a modern mas. Chef gardener Armand Arnal has firmly dug his fork into the soil of the organic vegetable garden and orchard around the property. In addition to plants, the chef has no taboos from meat from the wild bulls, lamb from the neighbouring shepherd and fish from Grau-du-Roi fish auction… Armand crafts creative, often surprising and sometimes even disconcerting recipes, mingling acidic notes and home-made vinegars. Three hectares of flower and vegetable gardens, greenhouses, hives and orchards, together with a magnificent leafy patio – heavenly!

"Our essentially plant-based cuisine puts fruit and vegetables from our organic vegetable garden at the heart of our dishes. As for the ingredients we do not grow ourselves, they come from small Camargue farms located around the restaurant and express with character the identity of our land."
