The chef wisely focuses on just a few prime seasonal ingredients in each dish, but he isn’t afraid of adding some innovative and original touches to give your tastebuds a workout. Mussels, for example, are hidden under shiso leaves, while succulent pork collar comes with onion jus and sea beans; if you see beef tartare on the menu, be sure to order it, as it arrives on a thick slice of sourdough along with nettles and anchovy and is delicious.
