On the shorefront, overlooking the beach huts and the sea, this restaurant done up in blues and greens bears the tasteful hallmark of interior decorator Caroline Tissier. In his tasting menus, chef Shasitharan Manogeran prepares fish from the Somme, drawing on flavours from his Malaysian origins, including coconut, chilli and citrus fruit. Savour, for example, the kohlrabi "in the spirit of pastrami", or a pollack, puffed black rice and passion fruit sauce. A globetrotting dining experience you will want to repeat!
