The carefully considered trimmings are a testament to the butcher's commitment to quality and craftsmanship. Think beautifully marbled cut of Simmental beef, simply seasoned with coarse salt and rosemary, and served with a tomato salad and a lightly whipped béarnaise sauce. What a feast!
