A branch of ‘Sukiyabashi Jiro’, this is run by Takashi Ono, second son of the world-famous sushi master, Jiro Ono. He goes to Toyosu every morning to chat with seafood brokers and find out what’s happening in the ocean. He selects fish with a keen eye for quality cultivated over many years. With old-fashioned solicitude, he asks the customer how big they want the nigiri. With vinegared rice and sushi topping in hand, he serves what is the essence of Edomae sushi.
