Ein Stern: eine Küche voller Finesse
Close to Nijo Castle is this charming restaurant, housed in a machiya (townhouse) built around the turn of the 20C. The owner-chef Kohei Furuta honed his technique at a ryotei in Kyoto and kappo in Tokyo. His approach is to let the produce speak for itself in uniquely devised dishes. Accordingly, his inventive tsukuri arrangements form part of the natural flow of dishes served. Eager to delight his customers in the spirit of a true chef, he ends the meal with seasonal takikomi-gohan.
