Stefan Jacobs has metamorphosed the Ernage farmstead. This gifted chef has opened a B&B, a bakery and a tasteful restaurant that sports a rough, brutalist look. His sustainable ethos can be tasted in subtle dishes, rife in unorthodox and playful combinations. His devotion to the produce of his own cottage garden and that of local market gardeners is unwavering. He may use cucumbers in a myriad of ways, such as in a concoction of mussels, briny seaweed and fresh veggies. Or would you prefer a veggie burger stuffed with different textures of courgettes, radish and turnip and served with a veggie gravy that is reminiscent of a big-boned BBQ sauce? This light-hearted culinary ethos is paired with an unconventional wine list that has been savvily curated to enhance the food’s numerous nuances. A generous ode to the region!

"By favouring short food supply chains, we have more control over our environmental impact. We have adopted a zero-waste approach in the kitchen. We deploy new techniques: drying, smoking, preserving in jars and in vinegar so that we don’t have to throw anything away. Yesterday’s secondary ingredients have become the primary ingredients of tomorrow. We have our own kitchen garden and work with fish that is available in abundance. Hors-Champs is committed body and soul to an eco-responsible ethic."
