The menu stars chả cá, deboned Hemibagrus catfish (cá lăng), seasoned with turmeric, wrapped in banana leaves and grilled. Served in a hot pot, it is lightly stir-fried with spring onions and herbs – best enjoyed with rice noodles and fish sauce.
