"All the materials used in the dining room come from the surrounding area: stone, iron, driftwood... No ingredient is imported: local alternatives to cocoa (roasted chestnuts and goat cheese whey), organic ikejime trout, meat from small farms bought as a whole carcass to limit waste... Any leftovers are transformed (garum, samba), dried (homemade charcuterie), or fermented (preserves, vinegars)."
