Wedged in between the Louvre Museum and Place Vendôme, this appropriately swish establishment caters to ten diners at most, who are lucky (and rich) enough to book a seat at the handsome chestnut wood counter. Diners admire the dexterity of chef Taichi Sato as he prepares sushi and sashimi with textbook precision using only the highest calibre ingredients (the fish, from Brittany or Spain, the fish is matured to be served at the optimal moment). All the menus are "omakase", meaning the diner leaves the choice to the chef (with premium ingredients commanding higher prices). From starter to dessert, you are in for a consummate culinary performance. Discreet, slick service. Superb sake selection.
