Hôtel du Couvent was indeed once a convent, occupying a patch of prime real estate at the foot of the hilltop park defining old town Nice’s skyline. It still retains an immaculate set of cloistered gardens, and much of the property is now given over to an impressive array of Roman baths. A resident herbalist brews up teas and other remedies to order. Rooms are spacious and simple, though not spare, grounding period plaster and tile with tasteful antiques.
