Thomas Keller has brought his magic touch to Mexican food, offering all the impeccable sourcing and technique of The French Laundry at a weeknight price point. Unsurprisingly, everyone wants in; and with no reservations offered, waits for a table can easily run over an hour. The excellent house margaritas help make the time go by a little faster. Chef de cuisine Kaelin Ulrich Trilling is a Oaxaca native, and you'll know it after sampling his complex mole negro spooned over tender chicken enchiladas. Perfectly caramelized pork al pastor, roasted on a traditional spit in the center of the kitchen, then arrives atop blistered blue corn tortillas. No table should go without that little taste of heaven that is Chef Keller's vanilla bean-flecked flan.
